Thermal Process Validation
The Food Training and Technical Services Department has a wide range of temperature measuring equipment and probes for the continuous recording of temperatures and pressures. Heat distribution and penetration studies are regularly carried out in industrial ovens, cookers and blanchers. Safe thermal sterilisation and pasteurisation processes are established and verified by carrying out heat penetration studies in a variety of containers, e.g., cans, glass, retortable pouches and plastic trays.
